Marinated Tomatoes – Carmy – Easy Healthy-ish Recipes

Whether you call this marinated tomatoes, seasoned tomatoes, or tomato salad, this recipe is so simple but delicious. It’s perfect for when I need a quick side or when I have guests coming over.

  • It’s simple as all you have to do is combine everything in a bowl and let the tomatoes marinate. There’s no cooking involved!
  • It’s a versatile recipe as you can eat the marinated tomatoes on their own or serve them on top of a salad, pasta, toast, and more!
  • It only takes a few minutes to prepare and then marinating it is hands-off! The flavour pay-off is huge for only a few minutes of work.

Ingredients You’ll Need

Ingredients needed to make marinated tomatoes.
  • grape or cherry tomatoes — while you can use any type of tomatoes, my go-to for this marinated tomatoes recipe are grape or cherry tomatoes.
  • garlic — fresh garlic is mandatory! I do not recommend using jarred minced garlic for this marinated tomatoes recipe. To make things easier, I mince my own garlic in bulk and freeze it.
  • lemon juice — you need fresh lemon juice. Bottled lemon juice does not have the same bright, fresh flavour.
  • rice vinegar — make sure to buy the unseasoned rice vinegar.
  • olive oil — as the ingredient list is short, I recommend a high-quality olive oil.
  • shallots — this adds a delicate and sweet flavour with a hint of sharpness but if you do not have any, an onion will work in its place. There will just be more of a bite to it.
  • basil — the more basil, the merrier!

How to Make Marinated Tomatoes

  • Cut the tomatoes in half. This will allow it to soak up more flavour.
  • In a measuring cup or bowl, combine the garlic, lemon juice, rice vinegar, and olive oil.

  • Add the tomatoes, shallots, and basil to a bowl.
  • Pour the marinade over top and toss to combine. Salt and pepper to taste.
  • Cover the bowl and marinate the tomatoes at room temperature for at least 30 minutes before enjoying. Transfer to the fridge if you want to marinate it for longer.

Recipe Tips and Notes

  • Make sure the shallots and garlic are minced as finely as you can. You don’t want huge chunks when eating the marinated tomatoes.
  • Do not leave the tomatoes whole as you want the marinade to soak into the tomatoes.
  • The easiest way to cut the basil is by rolling up a handful of leaves and then slicing them into ribbons.
  • I recommend using a shallow bowl to marinate the tomatoes in as you can make sure all of the tomatoes are in touch with the marinade.
  • The flavours are more prominent when at room temperature. So, if you’ve put them into the fridge, you should bring the tomatoes to room temperature before serving.

Recipe Variations

Here are some ingredients that you can add to the salad. Maybe not at once though 😉

  • mozzarella balls
  • cucumbers
  • sliced red onions
  • sweet corn
  • crumbled feta
  • crumbled bacon
  • thyme, oregano, sage, parsley, or cilantro can be swapped for basil

Ways to Serve Marinated Tomatoes

Other than eating the tomatoes on their own, here are some ways I like to serve them:

  • on top of avocado toast
  • tossed with some greens as a salad
  • serve it on bread like bruschetta
  • toss it in some cooked pasta along with some parmesan
  • spoon it on top of pizza
  • serve them over grilled fish or chicken breasts
  • add them to a grain bowl
  • stuff them inside of a pita or sandwich

Make Ahead Tips

  • Make ahead: you can marinate the tomatoes for a couple of days but it does get soggier with time. I’ve kept them in the fridge for up to 4 days previously.
  • Freezer: I do not recommend freezing tomatoes.

Ingredients

  • 600 grams grape or cherry tomatoes, halved
  • 1 shallot, finely minced
  • 1 handful basil, ribboned
  • salt and pepper, to taste

Instructions

  • Add the tomatoes, shallots, and basil to a bowl.

  • In a measuring cup or bowl, combine the garlic, lemon juice, rice vinegar, and olive oil.

  • Pour the marinade over top and toss to combine. Add a pinch of salt and pepper to taste.

  • Cover the bowl and marinate the tomatoes at room temperature for at least 30 minutes before enjoying. Transfer to the fridge if you want to marinate it for longer.
