This blueberry simple syrup comes together quickly and easily with four simple ingredients! Its sweet, fruity flavor makes for a delicious addition to any lemonade, tea, mocktail, or cocktail. You can also drizzle it over some pancakes, waffles, or cheesecake!

Whenever blueberries are in season, I love making a small batch of this blueberry simple syrup recipe to keep in the fridge. It’s sweet, fruity, and absolutely irresistible.   • It’s really easy to make! You simply simmer and strain the blueberries, and you’ll have this syrup ready in no time.
  • You don’t need fresh blueberries! You can make this syrup year-round with frozen blueberries if fresh blueberries aren’t in season.

Ingredients You’ll Need

  • blueberries — fresh or frozen blueberries work wonderfully for this simple syrup. If using fresh blueberries, make sure you rinse them ahead of time and pick out any loose stems and leaves.   • sugar — I’m using white granulated sugar, but you can also use brown sugar if you want more caramel notes in the syrup. You can even use a combination of both.
  • water
  • lemon juice — a splash of lemon juice adds a delightful brightness to the syrup. I’m also obsessed with lemon and will put it in anything I can.

How to Make Blueberry Simple Syrup

  • Combine blueberries, sugar, and water in a small saucepan.
  • Bring to a simmer for around 10 minutes or until the berries have softened, stirring throughout and gently mashing the berries with the back of a wooden spoon, spatula, or masher.

  • Strain the blueberry syrup so only liquid remains. You don’t want there to be any bits of blueberries in the syrup as it’ll cause the syrup to spoil quicker.
  • Add a splash of lemon juice to the simple syrup and stir to combine.
  • Allow the syrup to cool, and then transfer it to an airtight container and store it in the fridge.

Recipe Tips and Notes

  • I don’t toss the strained blueberries. Instead, I keep them to spread over some toast! It’s delicious!
  • If it gets too thick for your liking, you can stir a teaspoon of water at a time into the syrup until it’s at your desired consistency.
  • Try not to boil the syrup, a gentle simmer is all you need to dissolve the brown sugar.
  • If you don’t have precisely 1 cup of blueberries, you can use a blend of strawberries, cherries, or raspberries. This will alter the taste, but the result will still be tasty!
  • Instead of squeezing in lemon at the end, simmering the blueberries with some basil, rosemary, or mint adds a delicious herby flavor to the syrup.
  • This recipe yields approximately 1½ cup of syrup. You can double or triple this recipe. Just make sure to use a large enough saucepan to prevent the mixture from bubbling over.

Storage Tips

  • Storage: once cooled, store the blueberry sugar syrup in a mason jar or syrup bottle for up to 2 weeks in the fridge.
  • Freezer: you can freeze any extra syrup if you’d like! I like to freeze them in little ice cube trays so I can just pop them into drinks for some extra blueberry flavor!
