  • rolled oats — for best results, you should use old-fashioned rolled oats rather than instant/quick oats. These latter options tend to lose their texture after being soaked.
  • chia seeds — chia seeds come in both black and white seeds, but there is no difference in nutritional content. They’re also an excellent source of plant-based protein! When they absorb the milk, they expand and help thicken the overnight oats.
  • maple syrup — maple syrup is my preferred sweetener for overnight oats, but you can use your favorite one. Honey is a great alternative.
  • vanilla extract — just a splash of vanilla extract is all you need.
  • salt — a pinch of salt helps bring the flavors together.
  • yogurt — the yogurt works with the chia seeds to give the overnight oats a creamy texture. I suggest using a thick, creamy yogurt for the overnight oats. If you don’t have yogurt, you can use applesauce or mashed bananas. 
  • cookie butter — the cookie butter adds a delicious sweetness and creaminess to the overnight oats. The cookie butter has warm spices that bring a delicious flavor to the overnight oats. You can enhance the flavor by adding a pinch of cinnamon and nutmeg if you please.
  • milk — you can use any water or milk of your choice, from cow’s milk to non-dairy milk. However, I find whole milk to make the creaminess overnight oats. If you don’t have milk, you can make it with water, like my overnight oats with water recipe

How to Make Biscoff Overnight Oats

  • Combine the rolled oats, milk, yogurt, chia seeds, biscoff spread, maple syrup, vanilla, and salt in a bowl and stir until well combined.

  • Cover with a lid or plastic and refrigerate for at least 4 hours or overnight.

  • When ready to enjoy, you can add some extra Biscoff, top with some chopped fruit or berries, crumbled Biscoff cookies, or whole Biscoff cookies!

Recipe Tips and Notes

  • For a grab-and-go meal, mason jars are great. 16-ounce wide-mouth mason jars are great if you plan on adding toppings and don’t want anything to spill or overflow. I also LOVE a good weck jar.
  • If you’re worried the cookie butter is too thick to stir into the overnight oats, you can microwave the cookie butter for 10 to 20 seconds to soften it.
  • For extra protein, you can stir in a bit of vanilla protein powder.
  • An extra pinch of cinnamon or nutmeg goes wonderfully with the Biscoff.
  • Avoid topping the overnight oats with crumbled or whole cookies until serving, as they’ll soften in the fridge.

Make Ahead Tips

  • Meal prep: store the cookie butter overnight oats without any toppings in an airtight container for up to 5 days in the fridge.
  • Freezer: to freeze overnight oats, portion out the oats in small containers, then freeze! Thaw the overnight oats in the fridge for 6-8 hours/overnight before you’d like to eat them. You can store the overnight oats in the freezer for up to 2 months.

What are chia seeds?

Chia seeds are tiny seeds from the plant Salvia hispanica. You may recognize them from those cute little chia pet commercials from way back when but other than a cute terra-cotta pet, the seeds are packed with healthy goodness. Despite being tiny little seeds, a one-ounce (28 grams) serving of chia seeds contains 11 grams of fiber, 4 grams of protein, and 9 grams of fat (5 of which are omega-3s). Chia seeds last quite a while if you store them correctly. Make sure to store them in a cool, dry place like your pantry.

What are overnight oats?

Overnight oats are a no-cook method of making oatmeal! It’s made by soaking rolled oats in some liquid overnight, so they become soft and digestible.

Do you eat overnight oats hot or cold?

If you’re not a fan of a cold breakfast, no biggie! You can microwave the overnight oats until warmed through before enjoying them for breakfast.

Are overnight oats healthy?

I would consider this overnight oats recipe to be healthy as the ingredients are rich in fiber, protein, and antioxidants. They also contain a wide range of vitamins and minerals!

Can you use steel-cut oats for overnight oats?

While you can use steel-cut oats, keep in mind that steel-cut oats will need to be soaked longer, and the texture will be dense and chewy in comparison. This frozen fruit overnight oats recipe, in particular, uses rolled oats, so I recommend following the recipe if this is your first time making overnight oats.
